Creamy Cranberry Vanilla Overnight Oatmeal

When I was growing up, we didn’t eat a whole lot of homemade oatmeal. We usually ripped open a package, poured it into a bowl, added milk, and stuck it in the microwave for a quick, hot breakfast. I remember my favorite flavor was strawberries n’ cream. Second in line was cinnamon raisin which I made semi-homemade by adding a few extra raisins.

But now that I am a little bit older, oatmeal has become a favorite. Once I discovered how to make oatmeal delicious, I can’t stop creating new ways to eat this nutrient rich grain. We have a lot of busy mornings, so having something healthy and filling to serve quickly is always a plus. This oatmeal takes five minutes to prepare and it cooks up overnight so you have a hot breakfast ready to serve in the morning. While all my kiddos love this recipe, this one is my 9-year old daughter’s favorite. She requests it often.

I love the smell of warm vanilla filling my house all night long. The vanilla couples well with the tangy cranberries and the nutty flavor of the steel cut oats. This cooks up to be a tasty treat that will have you going back for seconds. I prefer it without added sugar, but a little sprinkle brings out the flavor of the vanilla and creamy oats. After cooking, add milk or cream. Mmmm…this is so good. enJOY!

  1. Mmmm… That sounds yummy! I could never eat oatmeal as a kid because it would make me gag… Lol I always are cream of wheat, made with milk, vanilla and sugar… More of a dessert than breakfast, but now, I do steel cut oatmeal with coconut milk, vanilla and sugar and just let it soak over two nights and eat it cold… It’s soooo yummy. So I’m wondering if maybe I can graduate to the big girls club and do your recipe…☺

    1. Hello my friend! Thank you for coming by to visit me. I ate cream of wheat as a child too. My mom would cook up a yummy version with cinnamon sticks and anise star, cinnamon, milk, and vanilla. It was so good. But now we are gluten-free so cream of wheat is not an option. Your oatmeal version sounds good too. But I’ll be happy if you come hang out at the big girls club! It is always nice to have company 🙂
