Easy Gluten-Free Flour Blend

My passion for baking helped me keep my JOY when our family transitioned to a gluten-free diet in 2013, shortly after our 5th blessing was born. Regardless of my healthy weight, “healthy” eating habits and exercise, I was still high risk for diabetes. We also faced other challenges including behaviors, lack of focus, and skin issues. And with Celiac disease in our extended family, we decided as a family we would support each other as we gave up eating gluten as well as significantly reducing our consumption of processed sugar.

I sought to make things homemade to save money. Often, the recipes I found online  would turn out to be a flop… and money down the drain. I was so upset. I went from baking eight loaves of bread a week to none! I felt my baking days were over. But I kept on trying and trying and trying…and praying, and praying, and praying!

I continued pressing forward and researching all sorts of gluten-free flour blends on the market. One of the things I hear a lot from people transitioning to the gluten-free lifestyle is that a lot of blends on market lack fiber, are expensive, don’t taste good, or they are very starchy. Being that I have always been a whole grains kind of gal, I found it difficult to find gluten-free flour blends that would match the whole grain taste I so desperately missed. I was searching for a gluten-free hearty flour blend that would be versatile, flavorful, and a good source of fiber. I did not have much luck with pre-mixed blends from the store (and believe me I tried a bunch). So I experimented with making my own blend. A couple years later and a whole lot of mixing MANY different grains, I finally came up with three blends that I absolutely LOVE! Today, I’ll share my economical and tasty All-Purpose Flour Blend.

 

My All-Purpose Flour Blend is a blend of brown rice flour, oat flour, tapioca starch, and potato starch. I tested and experimented with different ratios. This carefully proportioned blend provides both flavor and texture that makes it a versatile blend to use in baking and cooking. I use this blend anytime I need all-purpose flour. The blend of grains is mild enough to use for thickening sauces and hearty enough for fresh baked bread. I have been using this blend for almost two years. I use this blend in my JOYFull Inspirations original recipes AND recipes that I have converted to gluten-free. I have also used this blend in gluten-free recipes that call for All-Purpose Flour with great success. I don’t include xanthan gum/guar gum in the mix because some of my recipes don’t call for xanthan gum/guar gum like the sugar n’spice donuts. 

 

This blend is easy to mix and EASY ON THE WALLET! It takes minutes to mix. Store it in a airtight container and use it for your next batch of cookies for your Christmas cookie exchange or for that fresh loaf of crusty gluten-free french bread! enJOY!

Tisha’s DIY Gluten-Free Flour Blend

Ingredients (PRINTABLE RECIPE)

BIG BATCH
9 cups brown rice flour
3 cups oat flour (I use gluten-free rolled oats and blend them until it becomes a fine flour)
2 cups tapioca starch/flour
4 cups potato starch

SMALL BATCH
4 1/2 cups brown rice flour
1 1/2 cups oat flour
1 cup  tapioca starch/flour
2 cups potato starch

Steps:

1. Mix all ingredients with a whisk until well blended.

2. Store in airtight container in the refrigerator.
