B3 & Mom’s Nacho Sauce

 

My oldest son and I whipped this together one day as we were preparing for our Family Night. With my ingredient list and his final touches, we tangoed in the kitchen and created this creamy goodness that we are happy to add as a new favorite to our Family Night menu. This cheese is flavorful, creamy, and it is perfect for dipping and pouring. My husband and I like to add jalapeños to our portion for some extra kick! EnJOY!

B3 and Mom's Nacho Sauce

  • Servings: 4-6

Ingredients:

    • 1/2  cup of Tisha’s GF Flour Blend (see below)
    • 1/4 cup butter
    • 3 cups milk
    • 3/4 tsp salt
    • 1/2 tsp pepper
    • 1/2 tsp cayenne pepper
    • 1 block mild cheddar, shredded
    • 1 block Monterey jack, shredded
    • fresh or all natural canned jalapeños (optional)

Steps:

  1. In a large pan, melt butter slowly on medium heat.
  2. Add flour and mix with wooden spoon or spatula. Continue to mix and cook flour mixture for 3-4 minutes.
  3. Slowly whisk in milk.
  4. Add seasonings.
  5. Simmer until mixture begins to thicken.
  6. Add shredded cheese by the handful and mix using a whisk until completely incorporated.
  7. Add another handful and follow this process until all the cheese has been added.
  8. Add salt to taste. Add jalapeños (optional)
  9. Serve warm.

Tisha’s Gluten-Free Flour Blend

  • 4 1/2 cups brown rice flour
  • 1 1/2 cups oat flour (I use rolled oats and blend them until it becomes a fine flour)
  • 1 cups tapioca starch/flour
  • 2 cups potato starch

Mix all ingredients until well blended.  Store in an airtight container in the fridge.

T-Tip: This cheese sauce is so versatile. You can use it plain as a dipping sauce, add salsa for queso dip, or use it as a topping on your loaded nachos!

T-Time Saver: If you warm the milk before you add it to the flour, it will reduce the time it takes to thicken. This also freezes nicely so double the batch and save some for later.
