This oatmeal takes five minutes to prepare and by morning you have a warm, hearty breakfast. The raisins cooking all night give this oatmeal a natural sweetness. You could get away without any extra sugar.
Serves 4-6
Ingredients:
1 cup steel cut oats
¼ cup ground flaxseed/flaxseed meal
2 cups water
1 cup milk (you can use evaporated milk like pumpkin pie)
1 can pumpkin
1 ½ tsp cinnamon
¼ tsp nutmeg
½ tsp salt
1 Tbsp butter
½ cup raisins
Steps:
1. Dump all ingredients into a 5-quart or smaller crockpot and mix well.
2. Cover, set the crockpot to low and cook for 8-10 hours.
3.Serve with cream or milk, a sprinkle of cinnamon, and a sprinkle of brown sugar (optional).
Optional: Top with Homemade Cinnamon Whipped Cream.
