Grain-Free Valentine’s Breakfast Treat

As I child I had SOOOOOO many allergies. I was dairy-free, egg-free, corn-free, yeast-free, grain-free…actually, I think I was able to eat cardboard. And back in the day (I mean WAY BACK in the day), stores didn’t stock all the allergy-free things they have now. Fortunately, my dietary restrictions were only for a time, but as child it seemed like FOREVER.

So what could I eat back then? Well, I remember I was allowed to have blanched slivered almonds as a “treat.” Well, I thought I would transform my memories of almonds into a real treat that is healthy enough to have for breakfast. These treats were JoyFully Inspired by “Elana’s Pantry.” We LOVE these Grain-Free Dark Chocolate Coconut Scookies. It is a cross between a scone and a cookie. The kids and adults in our house often request these for birthdays and our weekly Mommy Cafe Fridays.
