Today I have a treat for you! Literally. I get a lot of requests for this recipe. Featured below is my Refreshing Summer Salad inspired by Rochester Clinic’s CHIP program. I had the opportunity to taste this salad when I was a guest speaker for aromatherapy and stress management at the Rochester Clinic CHIP program. I absolutely LOVED it and so did my family. So I tweaked it just a bit and added Young Living vitality essential oils which are GRAS (Generally Regarded As Safe for Consumption). I love using YL citrus vitality essential oils to add an antioxidant kick to my dishes. I use it in replacement of or in addition to grated citrus rind, fresh squeezed citrus, or extracts.
This recipe is a SIMPLE STAPLE at our house. When my kids see me chopping, they know what is coming next. Our summer salad is filled with vitamins and antioxidants from fresh mango, cucumbers, and red peppers, and chopped fresh basil. The blend of sweet maple syrup and citrus vitality oils add a punch antioxidant support with a burst of freshness and flavor with a tangy twist. This recipe also tastes wonderful with a drop or two of Spearmint Vitality for a little minty freshness. Enjoy!

Refreshing Summer Salad
Servings: 6
Ingredients:
3 Sweet mangos, peeled and cubed
3 English cucumbers, cubed
3 Red peppers, seeded and cubed
1/4 cup fresh basil, chopped
1/4 cup pure maple syrup
5 drops Young Living Lemon Vitality Essential Oil
5 drops Young Living Lime Vitality Essential Oil
1. Combine chopped fruit, chopped vegetables and chopped basil in a large bowl.
2. In a separate glass container, add Young Living Lemon and Lime vitality essential oil to the maple syrup and mix well.
3. Smell the syrup blend and enjoy an uplifting aromatherapy experience.
4. Add maple syrup blend to the fruit and vegetables, and basil. Combine until fully incorporated.
4. The salad can be eaten right away, but it tastes very refreshing after 3-4 hours of refrigeration. Enjoy!

Oh my goodness! You got me from the moment I saw that mangoes was part of this recipe. It sounds absolutely delicious and I have printed off to try this. It will have to be without the Essential Oils though, so I’ll substitute with a squeeze of lemon and lime.

I LOVE this salad. Every time I make it, my kids devour it! I just made a batch on Sunday and it didn’t last long at all. I LOVE mangos. We had a mango tree in our back yard when I was growing up. There is nothing like a fresh sweet mango right off the tree! I hope you enjoy the healthy goodness in this summer salad! Love and virtual hugs to you.
